Rising Stars: Meet John Scollan of Maryland

Today we’d like to introduce you to John Scollan.

Hi John, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
For almost 50 years I owned and operated several businesses or was a small business executive at several other firms. I had recently retired from my last business when I was approached by the Founder of a small food rescue nonprofit who needed direction on growing and developing her nonprofit. I was intrigued and so impressed with Catherine Morneault, the Founder of Let’s Eat, Inc that I immediately signed up for service.
I became an active board of director and set out to help.
After a complete analysis I decided that more than another board member, Let’s Eat needed a chief executive and that’s exactly what I have become. Let’s Eat now has become an fully functional nonprofit with several departments and a new warehouse to house our entire operation.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
This journey has been full of challenges both anticipated and not anticipated.
First Let’s Eat from the start has been completely a volunteer organization. I recognized that we needed to have paid staff which is augmented by our volunteers. We now have 5 paid employees.
Every nonprofit struggles with revenue. Let’s Eat had no real structure to raise money. I created a monthly donation program and began writing grants myself. These efforts provided revenue by not enough to sustain and grow our mission.
We recently hired a professional grant writer who has generated several large grants within just several months of her joining our nonprofit. Additionally, we created a professional CRM program to automate our donor relationships. These actions have produced results. Our revenue in 2026 is 5 times higher than it was when I started.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
Let’s Eat is a Baltimore, Maryland based food rescue nonprofit. In 2025 we rescued over 1 million pounds of food then redistributed those food donations through a network of 30 charities, churches, food pantries, medical centers and schools.
We are most proud of the purity of our mission. In 2025 approximately 80% of every dollar received went back to serve our beneficiaries. We have never charged any person or organization a dime for our donations.
We never give any food to those in need that we wouldn’t serve to our own families.

Is there anyone you’d like to thank or give credit to?
Let’s Eat Founder, Catherine Morneault, deserves most of the credit. During the Covid pandemic in 2020 she stepped in when all major food recovery organizations stopped picking up food, Catherine just started a humanitarian centric nonprofit. Still today Catherine rises before dawn six days each to do the work of feeding hungry families in Greater Baltimore.
A second major contributor is our now Vice President of Marketing, Kelly Rose. Kelly developed our first professional website and created our social media platforms. This mother of three did all of this as a non-paid volunteer. Kelly singled handedly brought Let’s Eat into the Digital Age.
